When summer arrives and the days grow long and warm, barbecuing becomes part of the season’s rhythm. Whether on your home terrace or high in the mountains, the scent of glowing charcoal and fresh ingredients is simply part of summer. And in the crisp alpine air of Fiss, with sweeping views over peaks and valleys, a casual BBQ afternoon quickly becomes a true gourmet experience.
To make a barbecue memorable it doesn’t take much, but it has to be right. Spices are key: they bring out the natural quality of each ingredient and turn simple dishes into something special.
SHF Head Chef Michael Angerer knows that a well-crafted spice blend can be just as important as the marinade. That’s why he’s sharing one of his favourite recipes – an aromatic BBQ rub that’s easy to make and elevates any grilled dish.
For one jar, you'll need:
3 tbsp dried Mediterranean herbs (e.g. basil, thyme)
2 tbsp sweet paprika
2 tbsp sea salt
1 tbsp whole peppercorns (or 1–2 tbsp ground black pepper)
1–2 tsp garlic powder
½ tsp cayenne pepper or 1–2 dried chili peppers
50 g finely chopped dried tomatoes
Optional: ½ tsp coriander seeds
Preparation:
Crush all ingredients using a mortar and pestle or spice grinder, then fill into a sealable glass jar.
The result is a versatile, aromatic spice blend that adds the perfect finishing touch to any grilled dish.
