Ingredients for 1-2 portions
  • 120 g milk
  • 2 egg yolks
  • 4 g vanilla sugar
  • Pinch of salt
  • Dash of sparkling water
  • 60 g flour
  • 2 egg whites
  • 15 g granulated sugar
  • 30 g butter
  • 15 g raisins, soaked in rum
  • 30 g butter for frying
  • 15 g granulated sugar for caramelizing
  • Pan with a diameter of 28–30 cm

Preparation

Combine two-thirds of the milk with egg yolks, vanilla sugar, a dash of sparkling water, and a pinch of salt. Gradually add the flour and mix until smooth, then stir in the remaining milk. Beat the egg whites with granulated sugar until stiff but still creamy. Gently fold them into the batter. Heat the butter in a pan, pour in the batter, and spread it evenly. Sprinkle the rum-soaked raisins over the top. Cook over medium heat until the bottom is golden. Quarter the pancake, flip the pieces, and finish cooking. Tear the Kaiserschmarrn into irregular pieces, sprinkle with sugar, and caramelize briefly—either by tossing in the pan or baking in the oven at 220°C. Dust with powdered sugar and serve.
